Roland Dickey, Sr. created his original Kielbasa sausage recipe in the 1970s. Three decades later, Roland Dickey, Jr. added Jalapeño Cheddar sausage to the menu. Wycliff Douglas Provisions was formed when demand for Dickey’s beloved Kielbasa sausages outpaced supply. Chef Phil Butler went to work creating more than twenty varieties of hand-crafted rope sausages. 

Now specializing in 21 artisanal varieties of sausage and smoked barbecue meats, this state-of- the-art smokehouse is packed with multiple capabilities such as sausage grinding, blending, stuffing, marinating, tumbling, smoking, slicing, shredding, and high-speed packaging for the restaurant industry.
